TANNIE DALENE'S LENTIL LOAF (Kobie vd Merwe)

INGREDIENTS

  1. 6 oz cooked brown lentils (for lentils quickly cooked, add 2 cups boiling water to 1 cup raw lentils and microwave on high for 5 minutes.  Pour off the water and now add 1 cup of boiling water to the lentils.  Microwave on high for 12 minutes.)

  2. 1 cup grated mature Cheddar cheese

  3. 1 tablespoon chopped parsley

  4. ½ teaspoon cayenne pepper

  5. Lemon juice and salt and pepper to taste

  6. 2 large eggs

  7. 3 tablespoons cream / yoghurt

METHOD

  • Mix eggs and cream / yoghurt

  • Add to the remaining ingredients

  • Cook in a greased loaf tin at 160ºC for 45 minutes
