TANNIE DALENE'S LENTIL LOAF (Kobie vd Merwe)
INGREDIENTS
6 oz cooked brown lentils (for lentils quickly cooked, add 2 cups boiling water to 1 cup raw lentils and microwave on high for 5 minutes. Pour off the water and now add 1 cup of boiling water to the lentils. Microwave on high for 12 minutes.)
1 cup grated mature Cheddar cheese
1 tablespoon chopped parsley
½ teaspoon cayenne pepper
Lemon juice and salt and pepper to taste
2 large eggs
3 tablespoons cream / yoghurt
METHOD
Mix eggs and cream / yoghurt
Add to the remaining ingredients
Cook in a greased loaf tin at 160ºC for 45 minutes
