OUMA'S SOETKOEKIES (Kobie v d Merwe)


  1. 6 cups cake flour

  2. 2 cups butter (actually one cup butter and one cup lard)

  3. 4 eggs

  4. 2¼ cups light brown sugar

  5. 1 teaspoon fine cloves

  6. 1 teaspoon cream of tartar

  7. 1 teaspoon bicarbonate of soda

  8. Fine ginger to taste – I use about 2 teaspoons

  9. Fine cinnamon to taste – I use about 2 teaspoons

  10. Fine nutmeg to taste – I use about ½ teaspoon

  11. Pinch of salt


  • Beat butter and sugar until smooth

  • Add eggs and mix well

  • Sift in flour, additives, spices and salt and mix well

  • Cover and rest the dough overnight

  • Roll out thinly on a floured surface and press out Christimassy shapes

  • Grease / spray a baking tray and baked in a warmed oven of 200ºC for about 10 minutes, but keep an eye on the coolies to prevent burning.
